At this year’s special Ingredients area, visitors can not only discover numerous new raw materials, ingredients and exciting flavors, but also talk to food tech start-ups that, for example, cultivate cocoa butter in the laboratory, produce healthy salt from plants or use beer pomace to produce cocoa alternatives.

Following a brief presentation of the Ingredients special area, Diana Drewes from the future-oriented agency Haute Innovation will speak with SMEY, BettaSalt, and Endless Food about the societal megatrends of sustainability and health. She will also discuss future approaches to ensuring a reliable supply of raw materials in times of political unrest, climate-related crop failures, and the associated price fluctuations.

SMEY is a tech-bio company based in Paris with a development lab in Munich. It combines AI and precision fermentation to produce cultured oils and fats for confectionery. Its product portfolio includes, for example, cultured cocoa butter and palm oil-free functional oils.

The Berlin-based startup Plantsalt uses salt-tolerant plants such as samphire and algae as the raw material for its BetaSalt. With up to 50 percent less sodium compared to conventional salt, it aims to help reduce daily sodium consumption. It is enriched with 12 essential minerals and is said to intensify the flavor of dishes with unami notes.

The Danish start-up “Endless Food” uses resources such as brewer’s spent grain, cocoa shells, and leftover oat pulp from other food processing industries for its product THIC (This isn’t Chocolate). Thanks to a specially developed fermentation technology, the upcycled mash is modified to closely resemble the taste of cocoa. In the future, THIC could be used as a chocolate substitute for ice cream or baked goods.
